Ingredients

3-4 pork chops

8-10 slices of smoked gouda cheese

8-10 sliced green apples

Directions
Place the coal pan in the center of the trackster rail system - medium/high heat around 375F.
To prepare the pork chops, pat dry with a paper towel. Slice a 3-inch pocket into each of the pork chops. Be careful not to cut all the way through.
Stuff the center of the pork chop with a couple slices of smoked gouda and a few slices of green apple
Season with salt and pepper on each side.
Place the stuffed pork chops on the grill.
Grill each side until the internal temperature reaches 145F.
Serve with grilled vegetables like asparagus or broccolini, by trimming, then lightly coating them with olive oil, season with salt and pepper, and grill for 10 minutes. Enjoy!
