MONTANA MERRIAM SLIDERS W/ HUCKLEBERRY BBQ SAUCE

Some people get a bad taste in their mouth, when you say, “wild turkey”. This recipe is sure to change their mind. The butter allows the turkey to remain juicy while you are grilling and when you are ready to slice. I love the addition of the huckleberry BBQ sauce. It’s a simple recipe, but packs a lot of flavor to this slider. You’ll want more sauce added after that first bite. Keep grilling and continue to enjoy your time creating with friends and family.

Ingredients

1 Merriam Wild Turkey Breast

1 c. Butter, 2 sticks

1 tbsp Onion Flakes, dried
-
1 tbsp Parsley, fresh and chopped
-
2 tsp Rosemary, fresh and chopped

2 tsp Thyme, fresh and chopped
-
1 tsp Savory Seasoning, dried (can use Oregano, if not available)
-
1 lb Bacon, thick cut and cooked
-
8-10 White Cheddar slices
-
1 Red Romaine Leaves, torn into slider pieces

Micro Greens
-
Hawaiian Sweet Rolls, sliced, toasted and glazed with Sweet Roll Glaze (see recipe below)

8-10 Cocktail Skewers

1 c. Ketchup
-
1/3 c. Brown Sugar
-
1/4 c. Molasses
-
1/4 c. Local Honey
-
1 c. Frozen Huckleberries (you can substitute with frozen blueberries, or 8 oz. of Huckleberry Jam)

1/4 c. Bell Pepper, chopped

2 Sweet Pepper, chopped

1 Garlic Clove, minced
-
2 tsp Chili Powder
-
1 tsp Paprika
-
2 tsp Mustard
-
1 tsp Salt
-
1 tbsp Garlic Powder

5 tbsp Butter
-
1/4 c. Brown Sugar
-
2 tsp Worcestershire Sauce
-
1 tsp Dijon Mustard
-
5 tbsp Butter
Huckleberry BBQ Sauce
Sweet Roll Glaze
Directions
Merriam Wild Turkey Grilling
Prepare the grill to medium to high heat, about 375 degrees.
In a saucepan, add the butter, onion flakes, and herbs. Melt and set aside.
Take your Turkey breast and pat dry.
Take a basting brush and baste the turkey with the butter and herb mixture generously.
Place the turkey on the grill, and grill on both sides, while continuing to baste and until the internal temperature reaches 165 degrees.
Remove, and place the turkey in some foil to let rest for 5 minutes. Then slice thinly.
Huckleberry BBQ Sauce
In a saucepan, combine all ingredients, except for the butter.
Simmer over medium heat for 20 minutes.
Remove and stir in the butter until completely melted.
Let the sauce cool for 10 minutes and transfer to a blender.
Blend until smooth and it's ready to use.
Sweet Roll Glaze
In a saucepan, add all ingredients, Stir until well combined and the sugar is dissolved. It's ready to use.
Sliders
Take a sweet roll and on the bottom place a couple slices of turkey, white cheddar, cooked bacon (cut in half), greens, and drizzle some Huckleberry BBQ sauce on the top.
Take cocktail skewer, pierce through half a piece of bacon, and the top bun and skewer through the whole slider.
Continue to build the rest of the sliders and serve immediately.
