Ingredients

1 lb chorizo sausage

1 lb Oaxaca cheese, shredded

1/2 cup diced jalapeños

Corn tortillas
Directions
Prepare your grill for medium-high heat. Let it heat up while you prepare the ingredients.
Remove the chorizo from its casing and crumble it into a skillet. Cook over medium heat until browned and cooked through, breaking it apart with a spoon as it cooks.
While the chorizo is cooking, shred the Oaxaca cheese and dice the jalapeños.
Once the chorizo is cooked, spread it evenly on a cast iron skillet or a heatproof dish suitable for grilling.
Sprinkle the shredded Oaxaca cheese over the chorizo, followed by the diced jalapeños.
Place the skillet or dish on the preheated grill and close the lid. Allow it to cook for 8-10 minutes, or until the cheese is melted and bubbly.
While the choriqueso is cooking, warm the corn tortillas on the grill for a minute or two on each side until they are slightly charred and pliable.
Once the choriqueso is ready, remove it from the grill and serve immediately with the grilled corn tortillas for dipping.
