1 whole turkey (10-12lbs)
-
2 sticks butter
-
1 cup chicken broth
-
Rooster’s Strut Seasoning
Directions
Fire up your Burch Barrel to 325°
Spatchcock your turkey by removing the spine and pressing
firmly breaking the breast bone so the Turkey lays flat
Make your injection by melting 1 stick of butter and
combining with 1 cup chicken broth and 1-2 Tbsp Burch
Barrel’s Roosters Strutt
Inject your turkey and then season liberally with Roosters
Strutt
Place on the Burch Barrel skin side up
Once your turkey hits 130°, flip it over (skin side down) so
that the skin can crisp up
Once your turkey hits 155°, flip it back over and brush with
your favorite bbq sauce (we used Lillies Q’s Hot and Smoky)
Once your turkey hits 165°, pull it off and let it rest for 20 minutes before serving
