Grilled chicken drumsticks, smothered in a bourbon BBQ sauce perfect for your next backyard barbecue. Gather your friends and family around the barrel and devour these finger-licking fire-roasted drumsticks.

Ingredients

1 medium yellow onion - diced

4 tbsp butter

1 cup of sugar-free ketchup

1 tbsp yellow mustard

1/2 tbsp worcestershire sauce

1 tsp sea salt

1 tsp freshly cracked black pepper

1/4 cup bourbon

Rooster's Strut Seasoning
Directions
Bourbon BBQ Sauce
In a sauce pan add butter and diced onion
Next, add ketchup, mustard, worcestershire sauce, sea salt, and pepper
Stir to combine and bring to a simmer. Simmer for 10 minutes
Add bourbon and bring to a boil. Continue to cook sauce for 20 minutes until thickened
For a smoother sauce, blend the thickened sauce together
Drumstick Prep
Ensure that the drumsticks were evenly butchered. Remove and excess cartilage from the chicken
Lightly season the drumstick with Rooster's Strut seasoning
Toss the drumsticks in the bourbon BBQ sauce
Get the sauce underneath the skin and pull the skin evenly over the surface of the chicken
Sprinkle some additional Rooster's Strut seasoning on top
Place the coal pan 4 notches down
Place the chicken on the grill grate, lock the lid, and raise it up
Add some apple wood chucks (or any flavor you like) into the hot coal bed for some smoke
Hover for 20 minutes (depending on size)
Lower the grill grate all the way down and flip the drumsticks
Hover for an additional 20 minutes (depending on size)
Lower the grill grate back down and give the chicken a quick sear to crisp the skin
Pull them from the grill grate and top off with more Rooster's Strut seasoning
Finally, drizzle with the bourbon BBQ sauce and serve!
